  • 1 cup shredded zucchini
  • 1/2 cup brown sugar
  • 1/4 cup applesauce
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the bananas and then stir in the zucchini, brown sugar, applesauce, oil, eggs, and vanilla.
  3. In another bowl, mix the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Divide the batter among the muffin cups.
  6. Bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Allow to cool before serving.
