- 1 cup shredded zucchini
- 1/2 cup brown sugar
- 1/4 cup applesauce
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mash the bananas and then stir in the zucchini, brown sugar, applesauce, oil, eggs, and vanilla.
