  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tray with paper liners.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the rolled oats, almond milk, honey, egg, baking powder, vanilla extract, and cinnamon to the mashed bananas. Mix until well combined.
  4. Divide the batter into the muffin tray, filling each liner about 2/3 full.
  5. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool before serving.

Notes

  • For added flavor, consider mixing in some chocolate chips or nuts.
