2 ripe bananas
1/2 cup espresso
1/4 cup unsalted butter, melted
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, mash the ripe bananas until smooth.
Add the melted butter, granulated sugar, brown sugar, eggs, espresso, and vanilla extract. Mix until well combined.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips.
Fill the muffin tins about 3/4 full with the batter.
Bake for 18-20 minutes or until a toothpick comes out clean.
Allow cooling for a few minutes before transferring to a wire rack.
Notes
For a richer flavor, use dark chocolate chips.
